My Choice Monday

Ask & You Shall Receive

Monday

Happy Monday!

Whew! What a weekend! I’m about to fall asleep at my desk, and I have a sneaking suspicion Craig is feeling the same way today! His birthday weekend was AWESOME – but also one of those ‘vacations’ you need a vacation after to catch up! 🙂

Today’s “My Choice” is an answer to many a question we have received regarding FullTurn Church and our attendance there.

Here is a video clip of the Sunday ‘sermon’ a few weeks ago:

Listening to Pastor Alan, I can feel the Holy Spirit leading his message. We truly followed God to this place, and couldn’t be more ecstatic to have our weeks and weekends JAM-PACKED with Christ!

When the Holy Spirit is tugging at your heart, and urging you to do MORE for Him, to seek Him more, to follow Him more closely… you need to listen. It doesn’t matter if you are comfortable in the pew at church you have been sitting in for the past 12 years. He requires of us as Christians to seek Him first and foremost, and where He leads us, there shall we go.

Matthew 6:33

33 But seek first the kingdom of God and His righteousness, and all these things shall be added to you.

 2 Chronicles 7:14

14 if My people who are called by My name will humble themselves, and pray and seek My face, and turn from their wicked ways, then I will hear from heaven, and will forgive their sin and heal their land.

Y’all, if you ask for His guidance, He will lead you and He will guide you. There never has to be a decision you have to make alone. No problem or issue is too big or too small for Him.

And on a lighter note…

Lulu’s On Main

This AH-MAY-ZING restaurant in little ol’ Sylva, North Carolina is the definition of a hidden gem. The next time you come to visit us for more than one day, we will drive the 2 hours to have dinner here! There is a great menu for anyone and everyone – including those of us who are gluten-free, or going through a Lenten season of vegetarianism. 🙂 Click the image to be redirected to their website.

Enjoy the rest of your Monday – It’s time for a nap!

My Choice Monday

What’s For Dinner??

MondayWelcome to Monday!! Hopefully, all of you had wonderful weekends! We definitely did!!

This morning I was blessed with a beautiful surprise, and the entire course of this morning’s post changed! My sweet little grandmother from New Jersey called and let me know she flew into town and is in Atlanta! How exciting! Craig is still in town, so we are meeting her this evening after work and taking her to dinner.

Now, this sudden scenario may not seem an ‘issue’ to any of you, but yours truly is a PLANNER with a capital “P”, and immediately, my mind has gone into overdrive:

STOPSo, in your neighborhood, where would you take a surprise out of town guest for a casual, yet classy, not loud dinner? (Seriously, we want your answers below in the comments! You just never know when YOU will be in another town and not know where to eat…and I don’t mean a big chain restaurant either!)

Here are a few ideas in some of our favorite cities:

Empire State South – This little gem in the heart of Midtown Atlanta not only is a go-to for dinner. They offer breakfast, brunch and lunch, as well – not to mention some delicious desserts and libations! It’s a classy, casual setting – and perfect for out-of-town guests, as many of it’s food options are regionally delicious.

OK Cafe – While not even close to ‘fancy’, this is an Atlanta classic with DELICIOUS food and if you’re in the mood for comfort in a diner setting, this is the place to go! Breakfast, lunch, dinner, take-away – it’s all awesome! I highly recommend the Rocket Burger. Yum!

Pompeii Pizza – Located in Elk River, Minnesota (about an hour outside of the Twin Cities), we read rave reviews about this local pizzeria in Midwest Living magazine – and just had to try it out. It was delightful – This Italian girl can attest to pizza worth ‘wasting’ calories on, and this is it! Not only were their pizza and salads yummy, Craig found some local brews he was pretty impressed with, as well!

Chatterbox Pub – This neighborhood bar/restaurant in St. Paul, MN, will always remind me of our dating days. It’s one of the first places I went with Craig & his family, one of the first visits I ever made to Minnesota – fond memories for sure! 🙂 The food was tasty; the drinks were satisfying and there were even games to play while you waited for your food. Perfect!

The Mash House – This brewery/restaurant came highly recommended by my parents on a trip to the town in which I spent a good portion of my childhood – Fayetteville, North Carolina. Craig and I paid them a visit last year and were in no way disappointed! Steaks, shrimp, pasta, fish, sandwiches, burgers, salads, brewed-in-house beer… We may just go back simply to eat there again!

What are your go-to restaurants? Let us know, and we just may meet you there for a bite!

You’ll have to wait until later this week to find out just where we eat tonight with Grandma Flo! 🙂

Food For Thought Friday

Spaghetti Squash: It’s What’s For Dinner

Friday2Yay! Friday!!!! The longest (work) week ever has finally begun to draw to a close! If you’re practicing Lent this year, you know Friday means:

And in our household, I have given up meat completely for Lent, so we have been eating a lot of fish. A LOT.

So, it’s time to change it up! We’ve branched out to Spaghetti Squash! You can use this amazing gourd vegetable in so many ways! It tastes delicious; it’s filling; it’s healthy – and whether or not you are eating meat (during Lent or in general), you can enjoy spaghetti squash for dinner!

What's Up Wednesday

An Early Christmas At Our House

Wednesday

Hello everyone!

It has been a little while since I have written anything on the blog, so I decided that I would sit down and take some time on ‘What’s Up Wednesday’ to give a little bit of info on what has been going on.

Usually you see some pictures of the latest project I have been working on (for quite some time) and that being the cheval mirror for my wife. I am glad to say that the mirror part is finished so we have at least a full length mirror available!

photo (1)

It may sound silly to take on another project while I am finishing this one, but I find that working on another gets me motivated to work on the other, because I always reach a point where glue or a finish needs to dry, and then I can switch to the other one and keep going.

I decided to build a jewelry box for my wife, which I thought would be a pleasant surprise for her. I have no clue what I said that clued her in, though, because she straight out asked if I was building one! I could not keep it from her because I was so shocked that she guessed, that I knew I could not hide it in my expression!

Sunday we celebrated a little bit of Christmas early, and exchanged our “big gifts” with each other. This is only the start of our Christmas celebrating, as we have our stocking stuffers and Christmas dinner on Friday, and then we will celebrate with family after that! It will definitely be busy next week!

Christmas1

Pier picked out the perfect gifts for me!  I will share a couple of them! I received a red and green plaid flannel shirt, which will be the perfect and warm shirt to wear on Christmas! After opening that, she gave me this HUGE box. Although it was not heavy for its size, I began to open it and I soon realized that there was another box inside wrapped up… and I opened that to find another and another and another and another and another! I never thought it would be 7 boxes to open!! Just for her to find 7 boxes to fit perfectly inside one another must of taken months!

Once I finally got down to the actual gift box I opened it and found a Citizen Eco-Drive Skyhawk Blue Angels edition watch! I was fascinated by the fact that it set itself to the correct time with radio waves right then and there and later I read the “mini book” called an instruction manual and found out the many other features of this watch including the E6-B computer on the face dial of the watch! Pilots will know exactly what I am talking about! Also, no batteries to replace as it is charged by any light source and will run 6 months in complete darkness with a full battery!

I loved watching Pier open her gifts.  As some of you know, my wife has an amazing voice and I love to hear her sing. The best thing is she loves to sing, so I get to hear her often! I decided to get her a whole home recording and vocal system. I watched her smile as she opened the boxes containing the pro grade speaker,  song database of 17,000 songs, 2 pro microphones (one for me so we can sing together!) and a mixing board and cables! It is unfair if only I get to hear her, so I also included a special recording mic and audio interface so  we can record her singing!! I am sure that she will have some songs on the blog in the future!  We have already used both systems and I will say she sounds amazing on them!

Well, I need to get back down to the workshop and finish Pier’s jewelry box! We hope you all have a wonderful day, and join us again tomorrow for Thirsty For Christ Thursday!

Love,

Cooking Gluten-Free With The Newlywed Lefebvres

Happy Monday Everyone!

I’m not sure if everyone is aware of this or not, but one of our favorite activities is cooking together. We always have a really great time, and usually make every single recipe we attempt our own…Mostly because we have similar tastes in food, and because I can’t have gluten.

Did you know you can re-create almost anything you’d like in a gluten-free (and absolutely DELICIOUS) version? Here is our most recent endeavor:

Gluten-Free Italian Asiago Meatballs Over Angel Hair with Pier’s Pink Sauce

Begin by boiling a VERY WELL-SALTED pot of water. Once boiling, add entire box of gluten-free angel hair pasta. When the noodles have completed cooking, drain but DO NOT RINSE, and set aside.

Meatballs:
1 lb EACH of Italian Sausage & Ground Beef
1 Large Egg, beaten well
1 Heaping Tablespoon of White Rice Flour
To Taste:
Finely Shredded Asiago Cheese
Parsley
Oregano
Garlic Powder
Salt
Pepper
Red Pepper Flakes

Meatballs
Combine all ingredients in large mixing bowl very well with your hands. Make meatballs and set aside on plate. Add enough EVOO to a large skillet or sauce pan to cover the bottom. Heat on stove on HIGH. When oil is hot, add meatballs. Rotate until COMPLETELY done. This could take about 10 minutes. Constantly rotate until done. Remove from heat.

Pier’s Pink Sauce
1 Jar of Alfredo Sauce – nothing fancy, just plain is best.
1 Can Petite Diced Tomatoes
1/2 Cup Finely Shredded Fresh Asiago Cheese

Pier's.Pink.Sauce
Heat entire jar of plain alfredo sauce on the stove over medium-high heat until it begins to bubble. Add 1/2 cheese. When melted, add the remaining 1/4 cup of cheese. When melted and well-combined, add entire can of DRAINED diced tomatoes. Stir well.

Asiago
Return drained angel hair cooked noodles to the pot they were cooked in, and pour Pier’s Pink Sauce on top. Mix and combine well.

Serve generous helping on a plate and add as meatballs on top.
ENJOY!!!!

I wish we had taken a picture of the finished product…But seriously, by the time either of us thought about it, we were both halfway through our dinners! 🙂 So delicious and relatively easy! I urge all of you to try this! If you aren’t allergic or intolerant to gluten (or maybe you’re allergic to soy instead like my father), just replace the gluten-free white rice flour with regular AP flour and you’re good to go!

Stay tuned for our next gluten-free Newlywed Lefebvre Creation: Buttermilk Fried Chicken!!! Yum!

Love To All of You!
