MondayWelcome To My Choice Monday Folks!

If you’re reading this post from anywhere in the United States, you’re likely a little bit cold today! Here in Georgia, it is currently 20 degrees with a wind chill making it feel like -5 degrees outside! While my husband may be used to this weather, us Georgians just aren’t! So, read on today to find out about an (audio)book to warm your brain (& soul), a blog to warm your heart, and a bowl (of deliciousness) to warm your tummy!

1. The Bible From 30,000 Feet

I somewhat happened upon this “book” when I got my notification from Audible that my new credit was in, and I could choose a new book for the month’s enjoyment. I went on the site and came across this one…Naturally, I was interested in this one…I mean, my husband is a pilot and we are on the look-out every day for new and exciting ways to experience God’s Word.

What a blessing this has been. I listen on my way to and from work, while I’m getting ready some mornings…It is a “book” I just can’t put down. Skip Heitzig discusses the Bible in ways you can’t imagine and you’ve never heard before. Check out the videos here and here.

2. The Veil Of Chastity

Wow. This blog could have you enveloped in it’s insight all day long! I’ll be posting more on the topic of “The Veil” later this week, and have been blessed with the opportunity to guest post on this author’s site, so this is certainly not the last you’ll hear about the concept of “The Veil”… But on this cold day, take a moment to read a little bit about The Veil of Chastity.

Reading about the concept of “The Veil” is just another bump on the head of just how much God loves us and cares for us. This is a blatant indication of God as a Father figure, and it is so. very. beautiful. If you’re a single girl or guy, it will give you hope and peace. If you’re happily married, it will give you goosebumps.

Romans 8:28 – “And we know that all things work together for good to them that love God, to them who are the called according to [his] purpose.”

3. A Bowl Of Buffalo Chicken Dip

While this picture isn’t exactly ours, (thank you Starships & Laserbeams!!), the recipe that follows is so delicious you’ll probably not have the opportunity for a picture of it  – because it doesn’t last long! Craig & I usually make this dish as a casserole, but yesterday we opted for the “dip version”, being that we had too much going on to cook with anything other than a crock pot! Here’s what you’ll need:

2 lbs chicken breast (or tenders)
1 large bottle Frank’s Red Hot Buffalo Sauce (or buffalo sauce of your choosing)
2 blocks cream cheese
1 bag shredded colby jack cheese
Minced garlic
1 jar of ranch
 
Fully thaw chicken and place in the bottom of your crock pot, turned to High. Pour 3/4 bottle of buffalo sauce, & half jar of ranch dressing over chicken. Place one block of cream cheese & half the bag of shredded cheese over chicken. Add about 1 T (+/- to taste) minced garlic to crock pot. Place cover on the crock pot and let cook for about 6 hours on High. 
 
After about 6 hours on High, the chicken should be easy to shred. Shred the chicken and add the remaining ingredients to the pot. Turn the crock pot to Low and let cook for about 1 more hour.

When this is complete, stir everything together and you will have either a delicious dip or you can also serve over rice for a yummy entree!

Now, between your new book, blog and bowl of buffalo chicken dip, you should be warm from head to soul!

Cure For The (All Too) Common Cold

MondayGood Morning and Happy Monday!

I may sneeze my way into 2014 the way things are looking right now, and since I’ve had more than a few people acknowledge they’re suffering the same illness, we decided that today’s “My Choice Monday” should be about cold remedies!

1. The Neti Pot

I’ll have to admit, when Craig and I first tried this, we were both a little bit nervous…Intentionally putting water in your nose…Well, that’s just a tad nerve-wracking. However, we were faced with the necessity of having to do SOMETHING prior to boarding the long flight to Rome, Italy earlier this year, and to avoid eardrum-popping madness, we would have done just about anything. This turned out to be step #1 to freedom!

2. Comtrex Day & Night

Folks, this stuff is wonderful. I have been dealing with each and every one of these symptoms and this is the only over-the-counter medicine that really helps! Plus, it’s convenient to buy one box and have both daytime and nighttime relief!

3. Aura Cacia Peppermint Shower Tablets

I don’t know about you, but one of the things that seems to help the most when I’m really congested is a hot, steamy shower! Add a peppermint tablet to that steam-filled bliss and you’re on your way to congestion recovery!

I also found a DIY option that I think would work marvelously – I just haven’t been able to locate one of the ingredients in a brick and mortar store (Kind of essential when you have a cold now!). A Delicious Way To Wake Up!

MondayHappy Christmas Week!

We are writing to you from beautiful (& very chilly) Minnesota on this Monday before Christmas, with the perfect (mostly) prepare-ahead breakfast for your Christmas Morning!

Craig & I made breakfast for dinner last week, and tried this dish…It was so GOOD! We substituted blackberries & blueberries for the raspberries, and of course used Gluten-Free Bread – but you can certainly use “real” bread if you aren’t “gluten-challenged”!

yum2Oh my goodness, this was just so delicious! Craig ate his with maple syrup, and the look he gave me when he took his first bite told me he was in heaven! 🙂 Personally, I think whipped cream…or vanilla ice cream…mmmm…would be yummy, as well!

I would have taken a pretty, ‘staged’ picture our plates…but we just gobbled this up TOO quickly!!

Music & Meds For Christmas Cheer

MondayHappy Monday!

We are officially 9 days away from Christmas!! Aren’t you excited!? Craig and I ended up having Part One of “Our Christmas” last night, which is the only day we have had to ourselves since last Sunday, and will be the only day we will have completely to ourselves until the New Year’s Eve. We figured we should make the most of this special time together, and so we opened each other’s “big gifts” last night. It was so much fun! We are looking forward to sharing Christmas with our families beginning at the end of the week! I think just maybe we might be able to fit everyone in! Prayers and fingers crossed!

Now for our recommendations for this week!

EZY Dose Stackable Pill Reminder                                                                                Maybe you’re thinking this is an odd recommendation, but since I’ve started with the medication to balance my insulin, plus all the vitamins and supplements and allergy medications, I have struggled with a way to both make sure I remember to take them throughout the day, and to transport the pills. MY CHOICE Monday

Welcome to the first week of our new blogging format, and to My Choice Monday! This week’s edition is going to be a little bit overzealous due to some great finds this weekend – Craig and I have three recommendations today!

  1. Vaseline Lip Therapy Rosy Lips I found this little gem at our local Target the other day, and apparently, I was unbelievably lucky. This product has been available in the UK for quite awhile, but is hard to find in the US – of course. At $1.99, this is the best  lip balm around – not to mention the amazing and light rosewater scent. I have found it works well as a base for lipstick, as well as over lip stick for a hint of shine. And that leftover bit on your fingertip? Dab it on the insides of your wrists prior to applying your perfume (adds longevity to your fragrance), or simply alone for a very faint but beautiful rose scent. Click on the image above to go straight to Amazon to pay a little bit more for a two-pack if you can’t find this at your local Target, CVS or Wal-Mart! It’s worth it!
  2. Handel’s Messiah                                                                                                     piercraigmessiah12713Ring in your Christmas season by going to see this unbelievable performance wherever you may reside! Craig surprised me on Saturday morning by hopping out of bed around 8AM, rustling around downstairs, and returning with coffee and an early Christmas gift – tickets to Handel’s Messiah, performed by the ASO, and dinner reservations – which will sum up today’s final recommendation. I’m sorry girls, but I got him – the most wonderful husband in the world – and I’m never letting go! 😉 Here’s a little preview of a chorus from the Messiah you all should know. The live performance of this brought tears to my eyes. If this is so beautiful here on earth, I cannot even begin to imagine the glory of the songs the choirs of angels sing in Heaven. This performance felt like a foretaste.

    I couldn’t find a version on YouTube with the ASO, but this is a more than adequate example.

  3. Fleming’s Prime Steakhouse & Wine Bar                                                                  craigdinner12713Dinner at Fleming’s was the other half of my early Christmas surprise, and boy, did we find a new favorite “special occasion” restaurant! Not only do they have more than 100 different glasses of wine to choose from, they provide an iPad to every table to help with pairing your wine to your meal – or specific course, in our case! Plus, (Men, I’m talking to you!) notice the prime bone-in ribeye on my husband’s plate. He did, indeed, eat the whole thing, and we had some happy doggies when we got home! Fleming’s is a ‘chain’, much like Ruth’s Chris or Morton’s Steakhouse, but in our opinion, WAY BETTER! We thoroughly enjoyed our meal and our experience at Fleming’s! Click on the link above to see if there is a location in your area, and if not, come visit us in Atlanta.
