Food For Thought Friday

A Busy Weekend!

Friday2Oh my goodness – the word Friday may never have sounded as beautiful as it does today! This week has been a BLESSING, but also exhausting since last night was the first night this week I have slept well – If you guessed that Craig finally got home late last night, you’re right! 🙂

We have a busy weekend planned!

Tonight, we are running in the 8th Annual March Against Meth 5k.

And then we are going to reward ourselves with SUSHI NIGHT!!!! MMM! I am hungry just thinking about it! 😉

Tomorrow, we will be putting together the Princess Packages for the women who have been rescued from prostitution and sex trafficking by “Out Of Darkness“.

We cannot wait to share the pictures of everything we are donating to this wonderful organization! I asked my co-workers to contribute to this cause, and their response was overwhelming!!! Between my raiding Dollar General and all of my clothes closets, and their bags upon bags of toiletries and make-up and gently worn clothing….We have SO much to share with these women!!!!! I am SO THRILLED!!!

Today, you can round out our Love On Purpose week too! In the top left part of the sidebar (you will have to view this post in a browser to see it – and the video above), there is a link to donate to help fund a missionary’s trip to Bolivia! This is such a great great cause and every little bit will help!

And now for a little bit of our regularly scheduled programming – Food For Thought Friday!

In honor of Mother’s Day this weekend, check out these sweet baby ducklings who think this man is their father!!! Awww!

And this one is just plain frightening…

Why schools don’t teach finance and money-management classes at the high school level, I don’t know… I don’t believe there is ONE of us out there, though, that wouldn’t have benefited from some lessons early on! 🙂

And finally, The Nativity Stones – Do you remember this awesome company for whom we reviewed one of their necklaces back around Easter? If you haven’t already found something special for your mother, one of these beautiful crosses would be a wonderful idea! They have just asked us to do more photography for their advertising and marketing, and Craig and I are so thrilled to have maintained our involvement and support of such a truly beautiful company!

DSCN0855If you haven’t read the story of these stones’ origin, you should and you can right here.

Whew! Time to grab some lunch and get ready to run!!! I’m ready!!! (The faster I run, the sooner we can eat sushi! 🙂 )

Have a wonderful weekend and a beautiful Mother’s Day! Happy Mother’s Day to all of you out there – especially our own, and the two mothers-to-be – you know who you are!! 😉

A Whale Of A Tale

Tuesday

Happy Thank You Jesus Tuesday!

By now, I hope you have all watched our vlog from last week… If not, watch it here and the rest of the post will make more sense to you. 🙂

Craig and I have completely surrendered our fertility to God, and everything that goes with it – and if you’ve watched the vlog, you know that included our long held onto “baby girl name” of Olivia Florence. We are excited to one day welcome into our home and family a little girl named Jonah Elizabeth! What a blessing total surrender to our Lord is!

So, we all know the story of Jonah in the Bible, right?

God asked him to do something, and Jonah was scared. He ran away and was thrown off a ship, but instead of drowning, he was saved by God and swallowed by a whale. He lived in the belly of the fish for three days (the Sign of Jonah), and was delivered by the Lord – this time deciding to obey His commands!

So, Jonah is associated with a whale…And Jonah is typically a boy’s name… and all things whale and little boy are typically blue…

But after we received our revelation from God, and shared it, in faith, with all of you, Craig and I were walking through Target this past weekend and saw these things:

ALL THINGS PINK AND WHALEY!!!!!!!

Craig looked at me and said, “This is definitely an affirmation from God! We have to buy Jonah’s first blanket in faith!” and so we did:

How awesome!!! We serve such a wonderful God, and if we only ask He will respond. Never think your prayer or request is too small. Have faith in Him.

The point of the story of Jonah is that God rescues His people – and He doesn’t require earthly measures to accomplish His rescue! It doesn’t matter that doctors say I can’t ovulate on my own. It doesn’t matter that doctors don’t believe I can become pregnant without their assistance. God doesn’t rely on science and human knowledge. He created science and He operates in the supernatural.

Psalm 46:10

GOD’S WORD Translation (GW)

10 Let go of your concerns!
Then you will know that I am God.
        I rule the nations.
        I rule the earth.

PS – Don’t forget about Love On Purpose Week! Today is Intentional Kindness Day! Do something for someone else! #loveonpurpose

Trying To Conceive On Infertile Ground: His Perspective

TuesdayInfertility is hard. It’s hard on wives. It’s tough on husbands. It can bring a couple together or tear them apart. We ladies talk about our feelings and thoughts on trying to conceive all the time, but how does HE feel? Have you asked your husband? Here’s a mini Q & A from us to you – We had to do this one “long distance” so I e-mailed Craig the questions, and he sent back his responses:

  1. What were your expectations when we got married? How did you expect the first year to unfold?

Craig: I mean, just getting married, right off the bat, I thought within the first year we would for sure be pregnant. I had no reason to believe we wouldn’t be, and I mean, I didn’t know if we would necessarily have a ‘baby in hand’ within one year, but I definitely thought we would be pregnant, at least. As far as expectations, I was planning to spend that first year decorating a nursery and finding a great midwife…All the things we talked about doing when we got married – before we got married.

  1. What do you pray for in this struggle?

Craig: There isn’t a day that goes by that I don’t pray for patience and understanding in this struggle. God has answered every one of those prayers. It may not have been as quickly as either me or my wife has wanted, but they are definitely answered prayers – revealed little by little. He has showed us many signs, which can only have come from Him, that He does hear us. I ask Him for increased faith – that’s only going to help us. Overall in the end, I pray for the blessing of a child.

  1. Do you have hope God will bless us with children?

Craig: For sure I do. There is no doubt in mind God will bless us with children. He gives us everything we need, and there is not a doubt in my mind that He will not give us the blessing of a child. I mean, to have hope in Him, that is something I can’t doubt. I have hope in Him greatly, I don’t know how else to say it. Yes. I definitely have hope God will bless us. There is just no question in my mind.

  1. What has been, or would be, the best way to cope?

Craig: You have to go through this as a couple.  There is no getting through this alone. It’s a big thing, and it’s hard, and it takes two – really three – to get through it. The best way is involving that third one – God. You always have to have faith in Him, hope in Him, and know that He is going to take care of you.  Also, you can talk together about your goals and hopes. We talk about building a nursery. It helps us cope. It focuses on our positive future and speaking positively about this as a couple is very important.

  1. How do you feel others could help?

Craig: I mean, just like I’ve mentioned to you previously, the support of the Christian community – your family, is important. Maybe don’t be afraid to reach out to someone you know is having a struggle with infertility. Don’t be afraid to just ask about it, find out how things are going – to let the couple know that you are concerned. You might be thinking about it, but that message might not be being conveyed when nothing is said.

Maybe if we bring the topic up to you, it will begin a conversation, but when you ask how things are, and if there are any new developments, etc., it shows you care and that you’re there with us in the struggle to get through this. Basically, just speaking up is important. You know, if you reference something that makes you think of us and what we’re going through, point us in that direction. It makes us feel supported.

  1. When we still hadn’t conceived after a year, how did you feel? What were your thoughts?

Craig: I mean, watching what you’re going through and seeing how you feel and knowing everything that has been going on, my thoughts we definitely that something could be going on. The doctor kept saying: “No, no, wait a year. Wait. You’ll get pregnant.”  And it seemed like it took forever to get to that one year mark. The feeling of frustration is probably the biggest feeling I have felt. Not nearly as much as my wife, but seeing her go through all of this, and knowing how bad SHE wants a child (in comparison to how much I do – which is a lot!), I became increasingly frustrated there was nothing I could do myself.

That is a tough situation for me. You know, I just feel that, our (former) doctor should have listened. He should have looked at all of your symptoms at the one-year mark and not had us start from square one. They had all the information they needed right in front of them. That was a very frustrating deal, and it felt like a huge step back. Our having to point out what was going on made me really  feel that the medical field was lacking- especially our particular doctor. He was just so insensitive and uncaring.

  1. Do you feel there isn’t enough support for infertility in the Christian community?

Craig: I don’t know if I feel there is a lack. I feel that it’s (the support)there, but it’s most definitely under advertised and it’s hard to find out about it. If you have the “Hey, I’m pregnant – what do I do?” situation, there is plenty of information and plenty of places to go and people to talk with, but not necessarily with the opposite issue. There just isn’t the readily marketed support. “Who to go to?” is sort of a question. Do you go to a pastor or priest? What do you do? I think once you find someone to talk to, the support is definitely out there, but a lot of people don’t know how to start that conversation. Infertility is not a happy time and it’s not easy to approach. There is certainly a lack of available information on how to obtain support.

  1. What is the best way to comfort your wife?

Craig: That’s been a learning process for me ever since day #1. I would say that “being there for her” is the most important thing – but that is an all-encompassing term. At first, it’s more physically standing next to her, holding her hand, going to the appointments…but as time has gone on, I needed to ‘be there’ but I needed to do more. I needed to… I always want to pick up something, change it, make it right. I’m hands-on. This situation just doesn’t allow that, but I still need to support my wife. It’s hard. One thing I know I can do is that when she’s talking about her feelings and about what’s going on, I need to pay attention and listen attentively -not only agree and say “yes”, but partake in the discussion and share my feelings and thoughts with her about what I am feeling as well. I don’t want her to have the notion she is in this all alone. I am her husband, and she needs to know I am there right by her side physically, emotionally, spiritually through it all. And that’s an ever-increasing and ever-changing thing that I have learned maybe most about through this whole process.

This has helped us to get to know one another in ways I don’t know if we would have had we had a baby right away. At first I was one of those who didn’t know how to approach it. I was one of those people. I didn’t know if I should say something or not, or what if I said something that made her sad? But I learned that saying how I feel and comforting her, helped her feel like we are in this together – which we are, forever.

Wow. I learned a lot about my dear, sweet husband reading these answers. Like I said, knowing your husband’s or wife’s views on what is going on (spiritually, physically, emotionally) is really comforting. I have been down in the dumps before – really feeling like I was all alone in my sorrow – but between God and my husband, I have been lifted up and come to know I am not only wrapped in His Everlasting Arms, but I have a pretty amazing husband at my side, as well.

Sometimes realizing the blessings in your life comes by a rocky path.

Love to you all!

An Upcoming Interview: Trying To Conceive On Infertile Ground – His Perspective

TuesdaySo, today we have a little veer off of the main course. Today, we have some homework for you. 98% of every blog or article or forum you’ll read regarding trying to conceive and infertility is comprised of women, women’s opinions, women’s frustrations, women’s issues. But in a marriage aren’t we two who have become one flesh?

Let’s get the men’s perspective.

Next week, I will post an ‘interview’ between myself and Craig, with his point of view with respect to infertility and how it has affected our marriage and our walk with God. I encourage you, over the next week, to ask your husband poignant questions about the way HE feels, if you’re dealing with the journey that is Trying To Conceive On Infertile Ground. You may just be surprised with some of the answers you receive…

Feel free to comment below or send us an ANONYMOUS message about your findings or your thoughts! I’m really interested to see how men are affected, and I think it’s time we allowed them a safe outlet to express their feelings about this struggle. It’s not easy on ANYONE – man or woman.

Thank you for your response. ✨

In the meantime, one of our recent guest bloggers of Footprints On My Heart mentioned a really, really awesome ‘tool’ on her blog the other day – The Saint’s Name Generator. And trust me, all of you are going to be blessed by this little application!

What, you say? You aren’t Catholic? You don’t worship saints? Well, neither do Catholics, dearie. Let’s look at the definition of saints in the context of the Catholic Church:

What Is a Saint?

By

“Saints, broadly speaking, are those who follow Jesus Christ and live their lives according to his teaching. Catholics, however, also use the term narrowly to refer to especially holy men and women who, through extraordinary lives of virtue, have already entered Heaven.”

Okay, so basically, a saint is a Christian to whose live we can look for inspiration. Much like the extraordinary change in the life of  the Apostle Paul (i.e. Saint Paul), we are able to see the amazing power of Christ to transform lives. The Saint Name Generator is an awesome tool for gathering inspiration from a Christian who lived a life for Christ, and by praying about the outcome, it is sure that you will find the saint “chosen for you” to be truly “chosen for you”.

I prayed over which saint was chosen for me, and out came Saint Michael the Archangel… And many of you will understand the significance of that for my life…Wow. I’m telling you – if you don’t believe in the power of prayer… you need to PRAYERFULLY reconsider your stance!

Try it out – You can simply read the ‘life story’ of the saint and be blessed by it – Learn about the extraordinary transforming power of God – Discover a life that has a lesson to be learned.

Food For Thought Friday

Here’s Some Food For Thought: PAY ATTENTION!

Friday2

Today’s the day!!! Craig’s gotten his first two birthday clues…He took the dogs to the kennel this morning, and they gave him his 2nd clue – Meet me at my office this afternoon – We’re going out of town for the weekend!

But he stillllll doesn’t know where… 🙂 Clue 3 is coming soon! I can’t wait to share all the pictures and details with y’all on What’s Up Wednesday next week!

Last night when Craig got home, his first “gift” and clue awaited him – a note that said (to be read in the style of Dr. Suess 🙂 ):

“Let’s start this off right, like a scavenger hunt.

The first thing you’ll do is put the pups in the truck.

Water Dog Kennels – 8 AM SHARP!

When you have finished, you’ll know what to do…

Congratulations on receiving your first Birthday Clue!”

And next to the note/riddle, I placed the special birthday cupcakes I made for him yesterday:

Image From The Kitchen Is Calling

That’s what they were supposed to look like…but I probably should have paid more attention while making the frosting…

I created my own combination recipe, using The Kitchen Is Calling, and Taste of Home’s similar recipes, and my own ideas.

Image From Taste of Home

Everything was going well until it was time to make the frosting and I realized it was another (I do this every year somehow!) meringue frosting…which is delicious but oh so precise and time intensive…

After I had beat the frosting over heat for ten minutes, while sweating to death and switching my already-sore-from-pure-barre arms from one to the other, I transferred the mixture into a bowl….and without thinking…poured in the entire bag of coconut.

Yes.

I was SO. MAD. AT. MYSELF.

So, of course, when the cupcakes were complete, I had to taste one (albeit, a small one) to make sure they were edible… In fact, they were quite delicious! Even though I am not a fan of lemon-flavored desserts, I had to stop myself from having more than just the small tester cake. Yum! So…

If you, too, would like to make these delicious cupcakes, here’s the breakdown:

Lemon Curd & Coconut Cupcakes

 Ingredients

  • 1 cup butter, softened
  • 2 cups sugar
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 3-1/4 cups all-purpose flour (I used 2 cups of AP Flour & 1.5 cups of Cake Flour.)
  • 3-1/4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1-1/2 cups 2% milk (I used whole milk – as I do for all baking.)
  • FILLING:
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1 cup water
  • 4 egg yolks, lightly beaten
  • 1/3 cup lemon juice
  • 2 tablespoons butter
  • FROSTING:
  • 1-1/2 cups sugar
  • 2 egg whites
  • 1/3 cup water
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 3 cups flaked coconut (Make a note to yourself right now that these coconuts are for layering over the TOP OF THE FROSTING!!!)

Directions:

  1. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition.
  2. Transfer to cupcake pans. This recipe should yield approximately 36 medium-sized cupcakes. I recommend using cupcake liners, rather than just pouring the mixture directly into the pans. This should bake on 350° for 20 minutes.
  3. For filling, in a small saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil; cook and stir 2 minutes longer or until thickened and bubbly. Remove from the heat.
  4. Stir a small amount of hot mixture into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat; gently stir in lemon juice and butter. Cool to room temperature without stirring.
  5. Once cupcakes are cooled, use a cookie scoop or small spoon to remove small portion of the middle of each cupcake. Spoon cooled and thickened lemon curd into a small ziplock bag, seal, then snip one corner and pipe into the well of each cupcake.
  6. For frosting, in a large heavy saucepan, combine the sugar, egg whites, water and cream of tartar. With a portable mixer, beat on low speed for 1 minute. Continue beating on low over low heat until frosting reaches 160°, about 10 minutes.
  7. DO NOT ADD COCONUT! 🙂 Transfer to a large bowl; add vanilla. Beat on high until stiff peaks form, about 7 minutes.
  8. Spoon icing into another ziplock bag and similarly cut off a corner to pipe the frosting on top of each cupcake, hiding the lemon curd inside.
  9. Sprinkle all cupcakes with coconut.

Store in the refrigerator. Yields approximately 36 cupcakes.

Enjoy your Food For Thought Friday – and your cupcakes! 🙂

Don’t forget to tell Craig Happy 32nd on Sunday!

Thirsty For Christ Thursday

Listen.

ThursdayOh, the amazing things God has in store for you when you simply LISTEN.

As many of you know, I was raised a Protestant, in the Southern Baptist Church – if you don’t know this, please read this to get better acquainted with our story. Craig was born and bred a Catholic. Luckily, when God asked me to convert, I did so. He asked me at a time in my life when I had pulled away from Him, but through a beautiful friend and co-worker was becoming more and more drawn to the Lord. And the Roman Catholic Church was perfect for me. The routine, the beauty, the ceremony of it all. I found peace in Christ, and while I was oh so far from perfect and the person God was molding me to become, I saw so many changes occurring in my life.

As a child, we went to church every Sunday. We went to Sunday School every Sunday before “big church”. We went to Family Night on Wednesdays. I sang in church. We were very very very involved in church. And then, slowly, the older I got, the more I pulled away – and for the wrong reasons. I pulled away because of PEOPLE, not because of BELIEF. Instead of finding a new church home in college, I just didn’t go to church. Sure, I went with my parents when I visited, but really, I was only “there” – I wasn’t paying much attention.

Fast forward to late 2008-2009, and there I was, in church every Sunday, albeit alone. I began to sing with the choir. I attended Mass during the week occasionally. I had this desire to learn and to grow. My life was changing.

In 2011, God asked me to make a bigger change. He wanted me to stop choosing my own dates. He wanted me to let Him choose for me. He led me to Catholic Match. He chose my husband – and what an amazing choice He made (believe it or not! 🙂 )!

When we first got married, Craig & I were attending a parish in Dallas, Georgia. We really enjoyed the homilies (sermons), but there were some changes being made we didn’t agree with. We felt God calling us. We left that parish and ended up at St. Francis of Assisi in Cartersville, Georgia, where we instantly were welcomed with open arms! We were both immediately received into the choir, and I began to Lector. It was WONDERFUL to be involved again! It was WONDERFUL to have a church family!

As a little more time passed and we discovered the ‘reason’ we hadn’t yet conceived a child, I felt constantly compelled to do more. Seek Him more. Serve Him more. Pray more earnestly. Spend more time with Him. I continued to listen, and I kept feeling that we should attend a Protestant/Non-Denominational church, in addition to Catholic Mass. I kept brushing that thought aside. We were comfortable in our routine, and besides, Craig wouldn’t go to both services with me – would he?

After repeatedly having this feeling, I audibly told God, “If this is what you want, then you are going to have to help me out. You are going to have to work on my husband’s heart.”

A week or so later, I was driving home from work and I felt the Holy Spirit pulling me, “You need to go to Wednesday night church. Don’t you miss that??”

Why, yes, as a matter of fact, I did ‘miss that’! Hmm…Our friend, Julia, goes to church on Wednesday nights… I should ask her if I can tag along.

Lo’ and behold, that very night, Julia texted me…that maybe I should join her for church on Wednesday nights.

Did you just get chills?

I went, and I loved it! In the next few weeks, I continued to go, and then, I mentioned to Craig I would love for him to join me…and that maybe we could go on a Sunday too – in addition to Mass.

And he not only agreed, but appeared delighted and looked as if I had read his mind… Isn’t it interesting how God works? 🙂

And as we continued going to church all over the place 🙂 I felt God pulling at a familiar heartstring…One I remembered feeling a loooong time ago…but had been kind of silent for a little while. I felt God telling me I needed to minister. And the more I discerned that call, the more I knew He was calling me to minister to singles – an demographic I feel is often very much overlooked by the church.  And this time, instead of running away, fast and furious, I listened. I heeded His words, and I realized that no matter how inadequate I am, HE IS NOT! And, through Him, I can do all things.

This blog is another example of listening. What began as a way to keep family updated morphed into a daily message. We felt called to turn this into more than a mushy family update, and make it an expression of our faith. We were cautioned by MANY that much of this information was TOO PERSONAL to share, but we responded with our hearts – This is what God asked of us, and we have to take this leap of faith.

I don’t love airing our personal PCOS/infertility details. It isn’t always comfortable to share of beliefs with the world. But God asked us to make this blog about more than just us, so we have, at whatever expense that may bring.

So, as is usual now, last night I met Julia for dinner and had my favorite Salmon with Garlic & Herbs from Chili’s (I cannot get enough!), and then, we drove to Full Turn Church for our Wednesday evening Praise & Worship, and message from Pastor Alan. We sit on the second row, right in the middle. Julia always apologizes for wanting to sit way up there, but I love it. I love sitting in the front of church. It’s a challenge to be less distracted and more attentive to God. As usual, the message was an awesome one. I felt the Holy Spirit on my heart the whole time – mainly about praying over my infertility, and praying for faith and guidance. I prayed and prayed and prayed. And then Pastor Alan stepped off the dais and came to stand right in front of me. And my heart was beating FAST.

He said he was going to pray over someone, and asked for the anointing oil. Then he began to speak about faith and that with God and your faith in Him there is NOTHING that is impossible. He works in the SUPERnatural, not under the natural law. He mentioned Sarai, Abraham’s barren wife, in the Bible. Physical laws told her there was NO WAY she was going to have a child. She was in her 90’s! And still, Pastor Alan was standing right in front of me.

He sought me out, and asked about our infertility (which he would never have known about were it not for our blog!); he said he knew I had the kind of tenacious faith required for God to work miracles, and he said he knew the Holy Spirit had led us to Full Turn Church…and he anointed my forehead with oil, and the entire church prayed over me for my infertility, for our faith, for our future baby.

People, you should have seen me crying, and poor Julia’s hand probably still hurts today – I was squeezing it so hard, as I shook like a leaf.

God is awesome, y’all.

Look how He led us when we listened. From darkness to light, from light to pure joy, from joy to satisfaction and searching, from sadness and depression to HOPE and GRACE and PURPOSE.

And we haven’t even embarked on how I will minister to singles, yet!

Matthew 19:26

26 But Jesus looked at them and said to them, “With men this is impossible, but with God all things are possible.”

Really, give your life to Him and LISTEN with BOTH EARS when He speaks – and He will speak! He can take you where no one would ever have thought possible, and accomplish through you the IMPOSSIBLE – by man’s standards. It may seem silly, and it may feel uncomfortable, but He has a reason for everything.

We are blessed with Catholic Mass to have a solemn commune with the Lord; We follow that with a fervent praising, worshipping, learning and growing in God experience at Full Turn; Wednesday nights are another opportunity to fully immerse ourselves in faith and praise. And hopefully soon, I will be helping singles in our community stop and listen for guidance from our Lord and Savior all week long.

Truly, where would either Craig or I be if we had turned a deaf ear when He spoke?

In Him,

My Choice Monday

What’s For Dinner??

MondayWelcome to Monday!! Hopefully, all of you had wonderful weekends! We definitely did!!

This morning I was blessed with a beautiful surprise, and the entire course of this morning’s post changed! My sweet little grandmother from New Jersey called and let me know she flew into town and is in Atlanta! How exciting! Craig is still in town, so we are meeting her this evening after work and taking her to dinner.

Now, this sudden scenario may not seem an ‘issue’ to any of you, but yours truly is a PLANNER with a capital “P”, and immediately, my mind has gone into overdrive:

STOPSo, in your neighborhood, where would you take a surprise out of town guest for a casual, yet classy, not loud dinner? (Seriously, we want your answers below in the comments! You just never know when YOU will be in another town and not know where to eat…and I don’t mean a big chain restaurant either!)

Here are a few ideas in some of our favorite cities:

Empire State South – This little gem in the heart of Midtown Atlanta not only is a go-to for dinner. They offer breakfast, brunch and lunch, as well – not to mention some delicious desserts and libations! It’s a classy, casual setting – and perfect for out-of-town guests, as many of it’s food options are regionally delicious.

OK Cafe – While not even close to ‘fancy’, this is an Atlanta classic with DELICIOUS food and if you’re in the mood for comfort in a diner setting, this is the place to go! Breakfast, lunch, dinner, take-away – it’s all awesome! I highly recommend the Rocket Burger. Yum!

Pompeii Pizza – Located in Elk River, Minnesota (about an hour outside of the Twin Cities), we read rave reviews about this local pizzeria in Midwest Living magazine – and just had to try it out. It was delightful – This Italian girl can attest to pizza worth ‘wasting’ calories on, and this is it! Not only were their pizza and salads yummy, Craig found some local brews he was pretty impressed with, as well!

Chatterbox Pub – This neighborhood bar/restaurant in St. Paul, MN, will always remind me of our dating days. It’s one of the first places I went with Craig & his family, one of the first visits I ever made to Minnesota – fond memories for sure! 🙂 The food was tasty; the drinks were satisfying and there were even games to play while you waited for your food. Perfect!

The Mash House – This brewery/restaurant came highly recommended by my parents on a trip to the town in which I spent a good portion of my childhood – Fayetteville, North Carolina. Craig and I paid them a visit last year and were in no way disappointed! Steaks, shrimp, pasta, fish, sandwiches, burgers, salads, brewed-in-house beer… We may just go back simply to eat there again!

What are your go-to restaurants? Let us know, and we just may meet you there for a bite!

You’ll have to wait until later this week to find out just where we eat tonight with Grandma Flo! 🙂

TTC Tuesday

Mold Me & Make Me

TuesdayThe particular Bible study Craig and I have been working on mentions seeking God’s Will for your life. Over and over and over again. We have poured over the words and the scriptures associated with the study countless times. We have discussed everything, and talked about how God is working in our lives.

But somewhere along the way, I think we forgot that God’s Will for our lives isn’t always the same as what we WANT it to be. And sometimes it doesn’t seem “fair” – by human measures.

I remember thinking throughout my 20’s how badly I wanted a husband and to be married and settled down and to have a family of my own…But God had other plans for my life at that juncture.

Isaiah 64:8

 But now, O Lord,
You are our Father;
We are the clay, and You our potter;
And all we are the work of Your hand

When the time was right, and the Lord had molded me into more of the person He meant for me to become, ( I am still so far away from that person!) He directed me – and I followed Him – to the most wonderful man on Earth, and a perfect mate for me, my now husband. I recall all of the frustration and the years of waiting for Craig – and I recall a host of poor decisions I made during those years. What trouble and waiting would I have been spared had I simply allowed God to direct my life up to that point?

Craig & I both got married under the assumption we would be blessed with a child right away. Neither of us had any known health issues. We were secure financially. We were readyBut God didn’t agree. Here we sit, more than a year and a half later with 2 surgeries under our belt and a long list of other medical items to follow…Here we sit with no positive pregnancy tests, to date. If God’s Will for our marriage right now was to have a child, He would have blessed us already. He is all-powerful.

So what if we stopped thinking about what we want, and resolved to follow God along the path He has aligned for us knowing He will not forsake us. Having faith that He will bless us.

Romans 2:11

For there is no partiality with God.

That’s right. God does not play favorites – Remembering this has been helpful as we have navigated these stormy waters. He will bless us. We will have children. No matter what doctors tell us or science claims, with God ALL THINGS ARE POSSIBLE.

Interestingly, the moment we ‘gave up’ and let God put us into the palm of His Hand, He began to answer prayers we hadn’t thought of in months – with all the preoccupation on His not having blessed us with children. He began to mold us in ways neither of us could have imagined. Heartstrings that had been being tugged for years, but had been pushed aside because the enemy instills FEAR and DOUBT, were brought back to life, with HOPE and EXCITEMENT!

Romans 8:28

And we know that all things work together for good to those who love God, to those who are the called according to His purpose.

No matter where you are in your walk with Christ, He can turn it around. He can turn your pain into joy, and your mistakes into TREASURE. There is nothing that is impossible with God. Not one single thing. No matter what doctors or science or society says.

God is busy in our marriage right this second! He has some AMAZING things in store for us. The more we bend to His Will, and let go of our own, the more He blesses us and shows us the most beautiful things – right in front of our eyes for so long.

I like to think of our infertility journey in this way: If we hadn’t put so many roadblocks to God’s plan in our lives earlier on, how much sooner would He have brought Craig and I together? I mean, we did live less than a mile from each other without knowing it at one point in our single lives… How much sooner will He increase our family if we stop getting in the way of His well-laid plans?

What's Up Wednesday

Philipians 3:14

Wednesday

It has been non-stop since Friday last week. We told you we had an adventure of sorts planned and we weren’t lying!

The whole plan was to fly out to North Dakota for the weekend, visit Craig’s old stompin’ ground, and go to a University of North Dakota Fighting Sioux hockey game – and that’s precisely what we did! 🙂 Our weekend was just a tad bit more audacious than we had originally planned…

wpid-20140307_131250.jpgWe met at the airport around 4pm and tried to get out to Minneapolis…After running around from the T Concourse to the A Concourse and back, we realized neither Minnesota nor North Dakota were happening tonight! Everything was booked – overcrowded and oversold, at that.

Off to spend the evening in Madison, Wisconsin – for which Priceline came in handy! We were able to find a decent hotel with an airport shuttle at the very last minute!

Luckily, this hotel even sold beer, wine & champagne at the reception desk (You gotta love Wisconsin!) – which Craig and I happily enjoyed once we got settled in for the night! We thought we’d had a crazy, fly-by-the-seat-of-your-pants trip already…Little did we know…

THe next morning, we caught the hotel shuttle back to Madison’s airport and easily made it to Minneapolis on the first flight out. Whew. But…we didn’t make it on the flight to North Dakota…So we decided to drive…for five hours…in this:

Hatchback cars are a long-running joke between Craig & I, and when he first mentioned we may have to drive the last leg of our journey, I laughed that we might have to drive an “egg” car… Craig said, “No!” He had booked a compact – similar to a 4-door Ford Focus!

wpid-IMG951921.jpgI collapsed in a fit of giggles when I saw we were making the trek in this little beauty – a Ford Fiesta. Good thing we didn’t have the furs with us…My goodness, we’re relatively small people and we barely fit with our two carry-on bags and my purse. Cue CLAUSTROPHOBIA.

wpid-20140308_121945.jpgAs usual, we had a BLAST in the car, singing along to songs on a playlist I made quickly on Spotify. This is one I THOROUGHLY enjoyed at Wednesday night church with our friend Julia last week, and it was my  ABSOLUTE FAVORITE in our road trip mix!

Oh, I LOVE that song!!!! And I can’t tell you how AWESOME it was in person…Wow.

But back to our journey!

wpid-20140308_144938.jpgWe finally arrived in Grand Forks, North Dakota and checked into our little hotel.

wpid-IMG954664.jpgWe had dinner at the Blue Moose Bar & Grill – It was DELICIOUS!!!

We also had drinks at Whitey’s Wonderbar – and they had the spiciest and yummiest Bloody Mary I have ever had!

wpid-20140308_145106.jpgI had a special little skirt made on Etsy at the Preppy Pink Shop for the game, and found a coordinating green and black L.L. Bean shirt for Craig to wear. We may have been the only two people in the arena not wearing a jersey…But I just had to bring a little bit of the South to the Midwest. One does NOT wear a jersey to an SEC Football game, for sure! 😉 As a matter of fact, I’m not even sure I’ve ever worn jeans. Probably some of the cutest outfits I wear all year long are worn to Georgia Bulldogs football games!

und-hockey1The game was alot of fun! It was my first hockey game, and while I wasn’t sure what was going on most of the time, it was certainly more exciting to watch than some sports!

und - hockey2Unfortunately, UND lost to Western Michigan that night…But we still really enjoyed ourselves!

The next day, we got up early and enjoyed a beautiful Mass at St. Michael’s Catholic Church.

And then we headed back on the road for our five-hour journey in the Fiesta back to the Minneapolis airport…Only to NOT make it out on the last flight…And that’s another blog post all on it’s own!

By this point, we were a little bit grumbly…

wpid-20140309_193520.jpgBut we made it – by the SKIN OF OUR TEETH – to our last alternate – Kansas City, Missouri! And again…Priceline came in handy! We even managed to wrangle a Sheraton for the night, complete with a restaurant, a shuttle and a super comfortable bed – for a steal!!

wpid-20140309_193402.jpgWe finally caught a flight out of Missouri and made it back to Atlanta on Monday…We both collapsed as soon as we had a home-cooked meal on our stomachs, and slept long and hard! I felt as if we had run a marathon!!!!!

Which made Philipians 3:14 come to mind:

Philippians 3:14

I press on toward the goal for the prize of the upward call of God in Christ Jesus.

Things aren’t always smooth sailing…but we must finish the race and press onward toward the goal, the prize.

Until tomorrow…. 3 more days til this giveaway is over!!! “Follow” our blog officially to enter, or if you already follow us, comment below “Done.”.
